This super simple dressing is a fabulous balance of creamy, sweet, and tart all in one. I pairs fabulously with my Spinach Protein Salad, and also with the Garden Salad or whatever salad concoction you come up with. I also like it with arugula salads, as it complements the peppery bite of the greens quite well. Whip up a batch and try it out for yourself!
Orange Poppy Dressing
- 1 egg yolk
- 1/4 c. extra virgin olive oil or avocado oil
- 1 clove garlic
- 1 tsp. dijon mustard
- 1/4 c. orange juice
- 1/2 tsp. poppy seeds
Combine all ingredients EXCEPT the poppy seeds in a small bowl or wide mouth mason jar and blend with an immersion blender. Once creamy and smooth, stir in the poppy seeds by hand.
If you don't own an immersion blender you can also use a small food processor if you own one, or whisk by hand. If making by hand, mince the garlic well before adding.
Store in a glass jar in the fridge for up to 7 days.
