This recipe is a super simple, easy weeknight meal that is a hit with kids and adults alike. It is simple to prepare, easy to modify to personal tastes or preferences, and on the table in about 20 minutes. Can’t beat that! I use my Homemade Taco Seasoning, which is also quick to make and so much healthier than store bought options. I love having homemade seasoning blends on hand and ready to go!

This dish could also be a great Taco Salad by simply chopping the romaine and piling everything on top rather than serving at boats. If you have picky eaters at home, sometimes mixing up the presentation peaks their interest in different ways than the same ingredients might otherwise do. I also failed to add the fresh cilantro to my plate, but next time I will for sure! Enjoy!

Ingredients

  • 1 pound ground protein of choice beef, chicken, turkey, etc.
  • 2 cloves garlic
  • 1/4 red onion
  • 1/4 bell pepper
  • 3 T. Homemade Taco Seasoning See Separate Recipe
  • 1 head romaine lettuce
  • 1 avocado
  • 1 large carrot, peeled
  • fresh cilantro

Instructions

  1. Cut the base of the romaine off and discard. Wash and dry the romaine lettuce leaves, set aside.

  2. Begin cooking protein in a large cast iron skillet.

  3. Mince the garlic, onion, and bell pepper. Add to the skillet, stir, and allow to cook with the protein.

  4. Once the protein is thoroughly cooked, drain any excess grease.

  5. Add the Homemade Taco Seasoning, stir, and allow to cook for 1-2 more minutes.

  6. Place the individual romaine leaves on a plate to serve as the taco "shells".

  7. Spoon in the protein, then top with slices of avocado.

  8. Grate the carrot over top of the tacos, and finish with fresh cilantro.
