This tasty salad is quick and simple to make and packs a punch of nutrients like vitamin C, folate, vitamin K, magnesium, calcium, potassium, and B vitamins. It’s high in fiber, bright in color, and delivers a dose of healthy fats as well. And my little one approves too, so win-win!
I served this one up with my Orange Poppy Dressing and it goes well with Basic Balsamic Vinaigrette too.
Citrus Kale Salad
Ingredients
- 6 oz. chopped kale all stems removed
- 2 oranges
- 3 T. chopped pecans
- 1 T. flax seeds
- 1/4 c. feta cheese crumbles
Instructions

Rinse and dry the kale, remove center stems (if applicable), and chop into bite sized pieces. Place the kale into a large bowl.

Segment the oranges into a seperate bowl or onto a plate. After removing all segments, squeeze the excess juice from the orange fibers over the kale.

Massage the kale by hand to break down the cell structure. This makes the kale more vibrant in color, as well as less bitter and easier to digest.

Add the oranges, pecans, flaxseed, and feta to the kale and toss to combine.

Add dressing of choice and serve immediately.
