Recipe: Simple Berry Salad

Over the last few weeks, I’ve walked you through our garden live on Facebook and talked about the various berries we grow each year.  I’ve talked about raspberries and their many health benefits, and this super fast salad is a delicious way to enjoy them. Its bright, flavorful, juicy and crunchy, and pairs perfectly with my homemade Balsamic Vinaigrette. You can easily swap out the berries, nuts or cheeses based on what you have on hand (maybe a blackberry, walnut, and blue cheese rendition?) to keep things interesting and take advantage of whatever is ripe for the pickin’. Enjoy!

Simple Berry Salad

Servings 4

Ingredients

  • 5 oz. organic mixed greens
  • 1 pint raspberries or berry of choice
  • 2 oz. feta cheese
  • 1 oz. sliced almonds

Instructions

  1. Combine listed ingredients (or substitutions of choice) and dress with Balsamic Vinaigrette just before serving.

Alternative Combinations:

  1. Blackberries, Walnuts, and Blue Cheese

  2. Blueberries, Pecans, and Goat Cheese

  3. Strawberries, Pistachios, and Feta

  4. Create your own! There are so many tasty ways to mix it up! Try a combination of berries too!
